INGREDIENTS
2 pounds cod or flounder fillets
1/4 teaspoon pepper
1 tablespoon dried minced onion
1 garlic clove, minced
1 tablespoon olive or vegetable oil
1 1/2 teaspoons ground cumin
1/4 cup minced fresh cilantro or parsley
2 limes, thinly sliced
2 tablespoons reduced-fat margarine, melted

DIRECTIONS
Place each fillet on a 15-in. x 12-in. piece of heavy-duty foil. Sprinkle with pepper. In a small saucepan, saute onion and garlic in oil; stir in cumin. Spoon over fillets; sprinkle with cilantro. Place lime slices over each; drizzle with margarine. Fold foil around fish and seal tightly. Place on a baking sheet. Bake at 375 degrees F for 35-40 minutes or until fish flakes easily with a fork.

Nutritional Analysis: One serving (prepared with cod) equals 96 calories, 4 g fat (0 saturated fat), 30 mg cholesterol, 77 mg sodium, 3 g carbohydrate, 0 fiber, 13 g protein. Diabetic Exchanges: 2 very lean meat, 1/2 fat.

I am not a big fish eater, but this is the best fish recipe I have ever had! Do not substitute a thing and this will be a fantastic taste explosion when you eat it!!! I have sent this to all 3 of my kids who love fish!

I thought this was ok, nothing special. I think dipping it in the oil and butter and then putting breadcrumbs on it to give it a crunch might be better.

I made this with the cod fish. My family would not eat it. The lime when you cook it gets really really sour and soaks into the fish giving it a very wierd flavor. I would not recommend making this recipe for a group of people until you try it yourself first.

The fish was pretty good but I think the time to cook the fish if you're using flounder should be reduced.
