Peach Custard Pie I

The key to this lovely pie is making it with fresh gorgeous peaches. Plunge the peaches in boiling water for about a minute so that the skins can slip off easily. Pile the sliced peaches into a prepared pie shell and cover with a mixture of flour, sugar, cinnamon, and beaten egg. Slip into a hot oven for 30 minutes to bake.

Fresh peaches are sliced, tossed in sugar and lemon juice, piled into a baking dish, and baked until tender and bubbly. Buttermilk biscuit dough is dropped by spoonfuls over the peaches and sprinkled with sugar and nutmeg before it 's all slipped into the oven to finish baking.

Since my daughter, Beth, and her husband, Gary, do not care for cake, they opted for a 'wedding pie' on their special day. Family and friends made 75 pies, many of which were set on a tiered holder to resemble a tall wedding cake. This is Beth's favorite.
