8 cups chopped, peeled tart cooking apples
1/2 cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon

DIRECTIONS
In a Dutch oven, combine all the ingredients. Cover and cook over medium-low heat for 30 to 40 minutes or until apples are tender, stirring occasionally. Remove from the heat; mash apples (a potato masher works well) until sauce is desired consistency. Serve warm or cold.

Easy and delicious! My only modification was about 3/4 C of water, which I let most of boil off during the last 20 minutes or so of cooking. My husband & I both loved it - I will definitely make it again!

This is ridiculously good. A little on the sweet side, but if that is what you are looking for, this recipe is amazing. I think you could cut the sugar in half (or even almost out) and have a more natural style of chunky applesauce. The vanilla is a great touch.

I liked this recipe, but did make a few alterations. I used more apples, but less sugar. I used Splenda 1/2 and 1/2 brown sugar, the same amount of vanilla and a bit more cinnamon. I didn't peel the apples (Jonathon) and the skins gave it a pretty rosy color. I also added a couple handsful of Craisins.I thickened the juice with cornstarch just before I took it off the stove. It was more like apple pie filling than applesauce. Very good.

Loved Loved LOVED this! It was super easy and it had a little twist to the flavor that you don't get from "regular" apple sauce. I WILL make this again!

I made this today and was kind of disappointed. I don't really like the flavor the vanilla adds. I will stick with Sarah's Applesauce from this site. Not a waste...the kids seem to like it. Thanks anyway.
