This is hands down my all-time favorite macaroni and cheese recipe! I was hesitant to make it at first, because I had never before heard of cottage cheese or sour cream being used in mac and cheese...but, I'm so glad I gave it a shot. I found this recipe quite some time ago and I've made it many, many times since. I never change anything in the recipe -- it's perfect just the way it is. The only thing I "change" (not really a change, since it doesn't actually specify which to use) is my choice of bread crumbs. I use Italian style bread crumbs, not plain ones. The Italian flavor seems to give it a whole new layer of deliciousness. (The ONLY thing I would change, if I had to, would be the amount of bread crumbs. You could easily get away with using maybe a half a cup instead. But, I do love bread crumbs, so a full cup works for me!)
