I made these cookies with the following changes, and they turned out great:
*I used regular dried cranberries.
*I added 1/2 tsp. of cinnamon. YUM!
*I mixed some milk and semi-sweet chocolate chips in with the white. If you do this, they become Triple-Chocolate Cranberry Oatmeal Cookies.
*I used regular salted butter (not margarine), which I think is a key to make these good.
*And I also used REAL Vanilla Extract instead of the artificial stuff, which always makes cookies better.
I was skeptical about the measurements of 1/8 tsp. baking soda and salt, but the recipe turned out perfectly.
**Also, I just barely melted the butter, so the refrigeration time wasn't necessary. I baked half the batch immediately and the refrigerated the other half to see if it made a difference. But it only made a difference in baking time (I had to bake the refrigerated ones a little longer).
I am excited to give these jars out as Christmas gifts!
