2 pounds bulk pork sausage
1 large onion, chopped
2 cups cooked rice
3 cups crisp rice cereal
3 cups shredded Cheddar cheese
6 eggs
2 (10.75 ounce) cans condensed cream of celery soup, undiluted
1/2 cup milk

DIRECTIONS
In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place in a lightly greased 13-in. x 9-in. x 2-in. baking dish. Layer with the rice, cereal and cheddar cheese. In a bowl, beat the eggs, soup and milk. Spread over top.
Bake, uncovered, at 350 degrees F for 55-60 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Refrigerate any leftovers.

I have had this recipe for a long time, and was about to post it until I found this one :) This is my favorite "family" recipe (haha), although there are a couple of slight differences. My recipe calls for 6 cups of rice crispy cereal, 20oz of cheese, and only 4 eggs. This will serve more folks, but you'll need a bigger baking dish :) Also, you'll want to make it the night before and refrigerate it, as this will soften the rice crispy cereal. Otherwise, if you bake it right away, the casserole will have a bit more crunch to it.

This is one of the best breakfast casseroles I have even eaten. It is very light and fluffy. I did change the recipe to add more eggs and less soup though. My family doesn't eat onions so I left that out as well. To me the cereal makes all the difference. Everyone who has eaten this loves it!

I served this for New Years Day brunch. It was good, all my guests liked it. I don't know what the rice cereal added. I will probably look for a different recipe the next time.
