Christmas Banana Bread

INGREDIENTS
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups mashed ripe bananas
1/2 cup chopped walnuts
1/2 cup semisweet chocolate chips
1/4 cup chopped maraschino cherries

DIRECTIONS
In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; gradually add to creamed mixture. Beat in the bananas just until combined. Stir in the walnuts, chocolate chips and cherries.
Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 70-80 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

I used slivered almonds and white chocolate chips in this bread. I also added a little allspice to make it more festive and sprinkled the top with brown sugar and cinnamon. This'll make a nice gift for Christmas.

This is a wonderful recipe. I usually use an extra bannana and skip the cherries. It always comes out moist and sweet. Because I am always making several things at once I end up baking this in my toaster oven which works perfectly.
