My mother made this dish years ago, when she was a young girl living in Germany. Later on, she continued to make it for our family. Today when I cook it, the wonderful aroma of sauerkraut fills the house, bringing back many warm memories for me. Mother usually served plain boiled potatoes with this dish, but for a special treat she'd serve steamed dumplings.

A dash of apple juice adds a little sweetness, while a bit of apple cider adds a pleasing tartness to this simple and hearty one-pan meal of sauteed pork chops, simmered with sauerkraut and onions. Sweet or tart is up to you, but caraway seeds are a must!

Here's a perky variation on pork chops and mushroom gravy. Coat the chops with a mixture of bread crumbs and Parmesan cheese before browning. Then simmer the chops in cream of mushroom soup.
