1/2 cup rolled oats
1/2 cup butter
1 cup boiling water
1 1/2 cups packed brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons cocoa

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch pan.
In a large bowl, mix together the rolled oats and butter. Mix in boiling water. Set aside to cool.
Beat together the brown sugar, eggs and vanilla; add to cooled oat mixture and mix well.
Sift together the flour, baking soda, baking powder, salt and cocoa. Add to wet ingredients and mix well. Spread into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 40 minutes. Remove from oven, allow to cool, and remove pan.

Great cake! I brought some to work and everyone liked it. It's very moist and so easy to make! It could be topped with whipped cream, fruit or frosting if you'd like. I don't think it needs anything.

I'm surprised at how good this one turned out. I did not have a square pan, so I used a round instead. Since I was taking it to a potluck, I frosted it lightly as well. It was a hit.

Very nice recipe, however I did make some changes. First, I was running low on brown sugar, so I used 3/4 cup brown, and 3/4 cup white. Then, I added WAY more coco powder then called for. (Probably about 1/2 cup) It turned our great! SOOOO chocolatly and rich. It was great just like that. Didn't even need any icing. :)

This cake was moist, fluffy, and even a bit chewy because of the oatmeal. The consistency was excellent, but unfortunately there wasn't much favor!

This is a really easy and fun recipe to make with the kids and - they'll love the end result. For fun I put mini M&Ms on the top.
