My daughter and I disagree on the rating of this one. I think the chocolate cookies are too dry, she says it makes them taste just like Girl Scout Thin Mints. I even added some milk when making them as the batter was originally too dry to mix. The filling is perfect and the overall flavor of the cookies is very good.

Turned out great! I added lots of extra peppermint, but the cookies and yield were spot on. I didn't put in the fridge overnight (didn't think too far ahead), so instead put the rolls in the freezer until firm, about 20 minutes, and then into the fridge for a few hours. Thanks for the recipe. These were a childhood favorite.
