Chocolate Mint Sandwich Cookies

Ingredients

  • 6 tablespoons butter
  • 1 1/2 cups packed brown sugar
  • 2 tablespoons water
  • 2 cups semisweet chocolate chips
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • Filling:
  • 2 1/2 cups confectioners' sugar
  • 1/4 cup butter
  • 3 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 3 drops green food coloring
  • Dash salt

Directions

  1. In a saucepan, combine the butter, brown sugar, water and chocolate chips. Cook and stir over low heat until chips are melted. Cool. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add to the chocolate mixture.
  2. Drop by rounded teaspoonfuls 2 in. apart on to ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until firm. Remove to wire racks to cool.
  3. In a large mixing bowl, combine filling ingredients until smooth. Spread on the bottom of half of the cookies; top with remaining cookies.
