Delicious! I made this with soy milk, dairy free chocolate, and cool whip as substitutes and held up well. Very nice.

Very simple, and very tasty. I crushed up some of those little after-dinner mint/chocolate rectangles instead of chocolate chips, and added a smidge more of the extract, because I really like mint. Only advice I have is to make sure you whip the hell out of the cream before you fold it in; it will keep the whole thing from getting too hard in the freezer.
