Yummy! I used half butter, half margarine as I do all my cookies. Margarine helps keep them from spreading too much (keeps them thicker). Once done, I let the cookies settle for about a minute, placed the mint into the top of the cookie, and flipped it using a knife once the edges started to look melted. These aren't good until the mint is hardened after melting, so if you really can't wait, pop them in the fridge and they will harden quicker.:-) Very good, very different, very enjoyable. Try them zapped a few seconds in the microwave with mint chocolate chip ice cream on top. WOW! :-)
Update: Just a thought, the cookies where I spread the chocolate mint around a bit (and made a thinner layer of chocolate) taste a lot better than the ones where I left the mint to melt in the center. Those basically taste like a chocolate cookie with a mint in the middle. The others have almost a mint "icing". Those are the best!:-)
