This is excellent and easy for a crowd. I made 3 of these for a church function. Made one sugar free for the diabetics and dieters and it was just as good. I followed the frosting given in the most popular review but had trouble (I was using an electric skillet vs. burner). The sugar made the frosting too grainy so I started over and used powdered sugar. Success! Nice, smooth frosting and better tasting than canned frosting. Next time, I think I may try it with chocolate graham crackers.

Super easy. I've been wanting to make this for a while. My eldest helped me put this together. Fun recipe and it's one that disappears quickly. I used the Satiny Chocolate Glaze from this site in place of the frosting. Fun! EDITED TO ADD 11/01/08: My family loved this recipe. I'd make this again and again. I'd like to try it with another frosting on top and with chocolate or cinnamon graham crackers and either chocolate or cheesecake pudding. I bet that'd be even better!

Wow, great recipe! I did make changes based on other ratings, using chocolate graham crackers and french vanilla pudding. For the topping I make a ganache instead of frosting. Using a double boiler stir 1/2c heavy cream, 8oz semi-sweet chocolate chips, and 1tsp of instant coffee until smooth, cool for just a few minutes and spread over top layer of graham crackers. I accidentally forgot the top layer of graham crackers the first few times I made this (has become a weekly dessert), but do like it better with all three layers. It does use almost a full box of graham crackers, and is definitely better the next day.

You must make this with 'satiny chocolate glaze' on top instead of chocolate frosting! it will taste absolutely incredible!

I was looking for an easy dessert to provide for my husband's 40th birthday party. I made two pans of this and they were both gone in no time! So easy, and so delicious. I made it without the chocolate frosting the day before and let it refrigerate overnight. Microwaved the frosting and poured it over the dessert in the morning and then let it refrigerate until time to serve. Perfect!

GREAT reviews from co-workers. I took this to a bbq at work. It was all gone! I followed the ingredients to a T. I brushed my graham crackers with milk to make them moist. I also nuked the frosting for about 40sec to make it easy to spread. This is wayyyy too easy to make for how good it tastes. One coworker from another office said i need to bring this next time im up there! THANKS FOR SHARING. Super quick, cheap and easy! will def make again. (i would have taken a pic but it was all gone)

I tweaked the recipe, replaced the graham crackers with crushed oreo and the vanilla pudding mix with chocolate pudding mix. The result was marvelous! I also put 2 tbsp of cocoa powder into the mixture to make it more chocolate-y. I used this recipe as a dirt cake for my mom's birthday.

This is a very good recipe. I used Whipping Cream instead of cool whip. This recipe serves more then you would expect. I'm in a family of 6, and we can usually clean up a 13 x 9 inch pan. But this recipe is rich enough that we only ate half of that!

i didn't think the flavors were anything out of this world but considering how ridiculously easy it is to make, i give it 5 stars. my guests loved it, said it was the kind of dessert they would find themselves craving and asked for the recipe. thank you for sharing :)

I like to use either french vanilla or white chocolate pudding mix in mine, and I prefer to use nutella - the frosting is just too sweet for me. (Of course the nutella isn't LOL) Fantastic recipe for something that is so easy and quick to whip up!

this was soooo easy to make. My husband and kids can't get enough. I made it in a 9x9 and used french vanilla pudding and lite cool whip. I can't wait to make this again.

I don't understand the "eclair" part of this dessert. Maybe if it had another name I might like it better, but probably not. The simple flavors were just that, simple. Like another reviewer said, it just tasted like graham crackers and vanilla pudding. Not that special. I had a variation of this that combined one package of vanilla pudding and one package of coconut pudding, and it just didn't quite work, either. This might be a fun recipe to do with my kids, because it is so easy, but definitely not something I would serve to guests.

Made this with the homemade chocolate sauce suggestion. The sauce was good but too fudge-like for my gang. Next time I'll try the prepackaged frosting. Tasted more like a melted ice cream sandwhich or a smores bar than a chocolate eclair but still overall a great dish.
