This is an excellent recipe that I have been making for about 35 years and it is still a big hit wherever I take it. The chocolate topping I use is more like a glaze...not really a frosting. It calls for 1/2 C. semi-sweet chocolate chips, 2 tsp. white Karo syrup (that I melt/mix together in the microwave), 2 tsp. vanilla, 1 1/2 C. sifted powdered sugar & 3 tbsp. milk (you can always use a little more milk if you want it a little thinner). Pour this over the top layer of graham crackers & let it set in the fridge (usually I make this dessert the night before). The chocolate has a real smooth finish to it. Also, when I mix the Cool Whip with the pudding (French Vanilla) I add a couple drops yellow food color just to give it a little more color, otherwise, I think it's too pale.

Quick, easy and great for a crowd. Everyone loves it and will ask for the recipe! I usually make it the day before.

This recipe came together so quickly and so easily. I used the recommendation of Bays Chick and made the chocolate frosting recipe that she included in her review. I liked how this can be made in advance.

this is certainly quick and easy, and fun to make with the kids. but in terms of taste, it's really really boring. i used granny1110's recipe for chocolate topping, which was very good and much better than using a whole stick of butter for anything -- too much fat for such a heavy dessert. but this was not something i would take anywhere for other people. i can think of twenty better and more impressive recipes. unless my six-year-old wants to make this again, i don't think i will.

This was just OK. I've had much better eclair desserts. The graham crackers got dry somehow.

I had no idea how this would taste- but it turned out delicious. Followed exactly except I used BaysChick's review (first one on recipe page) for the chocolate frosting. This holds up for a long time. Making again really soon!

I have made this recipe a couple of times and I never have any leftovers to bring home. (too bad!) The only thing that I would suggest is to layer part of the icing in the middle. I found that all of that icing on top is a bit rich for us.

My mom used to make this for me when I was young, now I make it for my family each Christmas and on other special occasions. I brought this to the in-laws' this year and they all loved it. I don't mess with making my own chocolate sauce, I just use cake frosting and warm it up in the microwave before putting it on the dessert - it spreads easy that way.

I loved this recipe. I put everything into individual dishes, and I ended up icing the graham cracker before I put it on top of the last layer of pudding (otherwise it was difficult). I'd definitely make this again. :)

I thought this eclair was great! I have made it a couple of times now and everybody loves it! For the pudding I use french vanilla and extra creamy cool whip. Thanks for a quick and delicious dessert!

I made this for Christmas Day, everyone loved it only for the icing don't use frosting. Baker's chocolate has a microwave chocolate icing that hardens and taste great and best resembles éclair icing. Turned out great just spread thin or it is a little too hard and will make a mess when trying to cut it.

My mom used to make this recipe years ago before it had an official name, but this is the exact recipe she used. This has always been my favorite. A little tip though, you have to make it a day ahead, possibly even two and it is just that much better.

I find that I enjoy this chocolate topping better (1 1/2 cups confectioners' sugar, 1/2 cup cocoa, 3 tablespoons butter, softened, 1/3 cup milk, 2 teaspoons light corn syrup, 2 teaspoons pure vanilla extract) Blend sugar and cocoa, add butter and milk mix well, add corn syrup and vanilla...stir til creamy!! Very delicious cake.... My boyfriend's roommate has had me make it for him on multiple occasions for no apparent reason!!
