INGREDIENTS
1/2 cup butter (no substitutes), softened
1 cup sugar
1 egg
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/2 cup baking cocoa
1/2 teaspoon salt, divided
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 (10 ounce) jar maraschino cherries
1 cup semisweet chocolate chips
1/2 cup sweetened condensed milk

DIRECTIONS
In a mixing bowl, cream the butter and sugar. Add egg and vanilla; mix well. Combine the flour, cocoa, 1/4 teaspoon salt, baking powder and baking soda; gradually add to the creamed mixture.
Drain cherries, reserving 1-1/2 teaspoons juice. Pat cherries dry. Shape 1 tablespoon of dough around each cherry. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes or until set. Cool on wire racks.
For frosting, in a saucepan, heat chocolate chips and milk until chips are melted; stir until smooth. Remove from the heat. Add reserved cherry juice and remaining salt. Frost cookies.

I've done this recipe now twice and they are fabulous! This year, instead of wrapping the dough around the cherry, I drained the cherries and pulsed them in the food processor for about 15 seconds, and then blended it in with the dough. They are really pretty and taste great!

This is a great recipe. I was looking for something different this year to take to a cookie exchange and they were a hit!!! Instead of semisweet chocolate chips, I used White Chocolate chips with a little milk for texture with the cherry juice. Great Recipe.

My mom made these cookies when I was growing up, so I was very excited to find this recipe. To save time, I rolled balls and flatten them with a spoon, leaving a dip in the middle as a space for the cherry. I only used a 1/2 of one cherry on each cookie because that's how mom did it. As others have noted, it saves time to frost the cookies before baking--the frosting can start to harden while you are trying to make it look perfect on already-baked cookies, otherwise. The only reason this recipe gets less than 5 stars is because my husband thought they were too chocolatey (crazy, I know). I will make a double batch next time, though, because these went fast at our Christmas gathering.

These cookies are so good, especially if you're in a chocolate feeding frenzy! When I saw that the recipe only made 15 cookies I decided to double it. Uh oh, it actually made 63 when doubled. Here's a few things that I did that might help others. When it said to take a tablespoon of the dough, I measured it and then weighed it on my diet scale and it came to 20 grams. I then measured all the dough out so they would all be relatively the same size. This worked out much faster and they all baked the same. Also, instead of the cherry juice in the frosting, I put a teaspoon of almond extract (2tsp for double recipe) to give it more of a cherry flavor. With the cherries that were left over I cut them in half and placed a half on top of each completed cookie to give it some color (see photo). Although these cookies are a bit labor intensive, they are well worth the time.

I've been making this recipe for years. They are a big hit with my family. My brother comes home every Christmas just for these cookies. Very sweet, but that's how we like it! I often double the recipe to make a large batch. A lot of work, but definitely worth it. I also frost the cookies before baking, makes it a little easier!

I made these cookies this afternoon and they are some of the best cookies I've ever made. My husband loved them and he's not big on sweets. The only thing I did differently is that I frosted the cookies before baking them and they turned out great. This will be on my Christmas cookie list from now on.

These cookies were good and turned out beautifully. To make the hole for the cherry, use the back of a round 1/4 tsp. measure. Press it gently into the dough ball, and you get a perfect, round hole!

Excellent! Frosting is optional. Half the amount of frosting is sufficient; we even had some left over! I rolled the dough into round balls before baking to give them a nice smooth look.

These were delish! I made them at Christmas and doubled the cookie dough. I made 44 and had dough left over which I froze. Didn't change anything except I didn't pat the cherries dry as someone else had mentioned. Put them from the jar into the cookie dough. I think this kept them more moist. Yummy - a keeper!

Wow! I don’t even like chocolate covered cherries, but I love these rich little cookies! Easy to make, not expensive, perfect as a new addition to my Christmas cookie tray. I think I’ll use white chocolate chips in the frosting next time, with just a little extra red food coloring to make the icing elegantly festive, and to cut the intensity of the chocolate just a little. I made the frosting in the microwave… easy, and if it starts to set up too much, I can just nuke it another few seconds, stir, and carry on. Lovely!
