These muffins were so easy to mix while the breakfast coffee was brewing. I greased and floured the muffin tins, and I happened to use self-rising flour. I omitted salt and baking powder from the recipe, and I added 1/2 teaspoon of vanilla. I mixed all the dry ingredients well, and mixed the wet ingredients well, added the chocolate chips to the dry mixture, and folded in the wet mixture. They rose very well, had a tender crumb but held together well. These are a very nice, simple, tasty muffin!
