Chocolate Chip Muffins

INGREDIENTS

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/3 cup applesauce
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 2/3 cup milk
  • 1 tablespoon all-purpose flour
  • 1/4 cup semisweet chocolate chips
  • 1/3 cup chopped walnuts

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 8 muffin cups or line with paper muffin liners.
  2. Stir together 1 cup flour, baking soda, salt and cinnamon. In a separate bowl, cream together brown sugar and applesauce. Beat in egg white and vanilla.
  3. Stir flour into egg mixture alternately with milk. Mix in an additional 1 tablespoon of flour. Fold in chocolate chips and walnuts. Spoon batter into prepared muffin cups so that cups are half full.
  4. Bake in preheated oven for 13 to 15 minutes, until a toothpick inserted into the center of a muffin comes out clean.

I have tried this recipe two times now following the recipe to the exact word and i still found that they did not rise and they went very soft in the middle i shall not be using this recipe again.

Did not like this recipe. Shockingly enough, neither did my chocolate lover 3 year old daughter. Was tasteless. If it weren't for the chocolate chips, I think it would have been like eating styrofoam.
