1 cup butter, softened
3/4 cup superfine sugar
3/4 cup light brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 (3.4 ounce) package instant vanilla pudding mix
2 cups semisweet chocolate chips
1 cup chopped nuts (optional)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, beat together the butter, brown sugar, confectioners' sugar, and vanilla until smooth and creamy; then add eggs, and beat well. In a large bowl, mix together flour, baking soda, salt, cinnamon, and pudding mix. Gradually mix the dry into the creamy mixture until well blended. Stir in chocolate chips and nuts, if using. Drop by teaspoonfuls 2 inches apart onto ungreased baking sheets.
Bake in a preheated oven for 8 to 10 minutes, until golden brown. Remove from oven; allow cookies to cool momentarily on baking sheets before removing them to wire racks to cool completely.

Yum! These biscuits turned out great. They are crispy on the outside and soft in the middle and they look good - a nice puffy round shape. The cinnamon adds a unique flavour.

I tried baking these(only my second time dealing with cookies), and they came out just wonderful! They were a bit too soft once done cooking, but they're also very small, so getting them off the tray and onto a cooling tray wasn't hard at all. They hardened a bit once cooled down, but were still soft and chewy, which is a plus. The connamon was a nice touch. Everyone who has tried them has loved them.

This was a great recipe that allowed me to do ten different things at one time because once you had all of the materials it was SOOOOO EASY!!!

I changed this recipe a little and it turned out great, I doubled the vanilla and cinnamon. I added cinnamon chips instead of choc. chips. They were excellent! So chewy! Yum!

These cookies were delicious - however, one could barely taste the cinnamon! I suggest putting a lot more cinnamon in the mix when making this recipe, if one does not want a simple chocolate chip cookie.
