Chocolate Cereal Bars

INGREDIENTS

  • 2 tablespoons butter or stick margarine
  • 1 (1 ounce) square unsweetened chocolate
  • 1 (7 ounce) jar marshmallow creme
  • 2 tablespoons baking cocoa
  • 1 teaspoon vanilla extract
  • 6 cups crisp rice cereal

DIRECTIONS

  1. In a heavy saucepan over low heat, melt butter and chocolate; stir until smooth. Stir in the marshmallow creme and cocoa; cook and stir until smooth. Remove from the heat; stir in vanilla and cereal. Pat into a 13-in. x 9-in. x 2-in. pan coated with nonstick cooking spray. Cool before cutting.

Nutritional Analysis: One bar equals 69 calories, 2 g fat (1 g saturated fat), 3 mg cholesterol, 87 mg sodium, 13 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchanges: 1 starch.

Followed it exactly and it wasn't quite as sweet as I would have liked (but maybe that's just me). I took it to a treat potluck and they were the first treat to disappear!! Thanks!

Good Recipe. I used Chocolate Chex Cereal. I didn't have unsweetened chocolate, so I simply increased the Baking Cocoa to 1/2 Cup. Also made a topping by melting 1/2 bag of Semi-Sweet Chips and 1/2 Bag of Butterscotch Chips together in microwave on defrost, stirring occasionally until smooth and melted. I spread it over the top and it made a nice addition.

The only reason it doesn't get the 5 stars is because I really had to do a lot of figuring to get 24 servings sizes to match up the exchange for the fat values and diabetic exchange. It would be helpful the have the size in addition to the number of servings. Great tasting snacks.
