This golden, glossy delight could not be easier to make. All major varieties of pears - Bartlett, Bosc, red, Anjou - work equally well. However, Bosc roasts up slightly firmer than the others.

Sweet Chocolate Pears

Luscious ripe pears are slowly baked in a sweet bath of orange juice and sugar, then served with their own orange sauce and a drizzle of melted chocolate. For best presentation choose firm pears, do not remove the stem, and core the pear from the bottom.

They make a beautiful presentation for special occasions and are always well liked by both young and old. TIP: I've occasionally used home-canned pear halves and no one ever knows the difference, Edna says.

My grandmother would use food coloring to make red and green pears only at Christmastime, and I enjoy carrying on her tradition. When I prepare this for a salad, I fill the centers with fresh fruit, fruit cocktail or cottage cheese.
