This frosting is really good--I found that 1/4 c. butter wasn't enough compared to the amount of powdered sugar--when I mixed the two, the result was dry and crumbly, not "light and fluffy," so I added the other half of the stick of butter and it seemed to be just right then. I used this on a red velvet cake and it was great, but if you want to use it on a cake, you'll probably need to double the recipe.
