This chocolate cheese cake was amazing! I baked it in a water bath and it did crack anyway, not sure why, however I topped it with a chocolate ganache (1 cup semi-sweet choc chips and 2/3 c. heavy whipping cream, found at this site), so it didn't matter. I strained the raspberry sauce through a strainer to remove seeds. Truly delicious!!
