Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  2. Beat butter and sugar until creamy. Beat in eggs one at a time, then add mashed banana, canola oil, and vanilla. Fold in flour and 1 cup of chocolate chips. Place a dollop of batter into each tortilla, then roll up in a cylinder to form an "enchilada"; place into prepared baking dish.
  3. Bake "enchiladas" in preheated oven until a toothpick inserted into the center comes out clean, 30 to 45 minutes. Melt the remaining 1/2 cup of chocolate chips in a small bowl using the microwave. Drizzle over the "enchiladas" as soon as they come out of the oven.

I think this recipe has potential, but it really needs to be worked on. There is no sauce on the tortillas, so they really dry out when you bake them. It was actually kind of sharp going down my throat! Maybe coat them in butter? Or bake them in a syrup like the fruit versions?

Even though Im not a big Banana fan this was just as good as anything else.. I too had trouble with the dry edges but I solved that by making a banana sauce with the left over mashed bananas (about 1/4-1/3 cup and added about a cup of water, 1/4 cup sugar and 1/4 cup butter in a sauce pan and poured over them before baking. This helped and did not take away the yum! Gonna see about making a low fat version of this too!
