Yum! We loved this pie. It's pretty too, although a bit messy to serve. I substituted soy milk for both the milk and cream and it worked beautifully. It's excellent in a crumb crust.

at the beginning, never stop stirring, and you may want to add the corn starch to a small bit of milk before mixing with everything else, to avoid lumps. Delicious pie.
