"This recipe is super easy with a food processor! Use this mayo on cold cut sandwiches or mixed with canned fish. Don't use Miracle Whip or salad dressing for this. Neither one qualifies as mayonnaise and are not as thick as the real thing, which will make your result much runnier. You can get the chipotle chiles in adobo sauce at a supermarket with a good variety of more authentic Mexican items. They are either canned or bottled."

DIRECTIONS
In a food processor, combine the mayonnaise, chipotle chilies, and adobo sauce. Pulse until smooth and well blended.

I've made a variation on this for years...I add 2 cloves of garlic and some fresh lime juice..it's awesome.

Excellent dressing! This was delicious on jazzed up BLT's made with pepper bacon, avocado, and swiss. I used the leftovers the next night for dipping Old Bay Steamed Spiced Shrimp. Thanks for sharing!

hubby loves this mayo- i took the previous suggestions and added 1 clove of garlic and a few tsp of lime juice- added to blt sandwiches and also to a spiced rubbed chicken wrap

Love this recipe, and I use it all the time, on all kinds of things. As a spread on my sandwich, on chicken and steaks, pork chops... yum yum. bet it would even taste good as a dip.

FABULOUS!!! I added two cloves of garlic, three teaspoons of lime juice and cilantro. I even added an extra pepper! Looking forward to serving with the Carne Asada Tacos tonight!! .....okay, dinner over and my teenage son wanted to eat this as a dip with chips... I guess they like it!! Wonderful!!

very good.. good with a mild cheese such as provolone or havarti, we made sandwiches on a baguette with turkey and spinach. definitely a keeper.

Very easy and tastes great. I doubled it but didn't add the extra tablespoons of chipotle, as it was spicy enough. Thanks for the great condiment.

I, too, have made this for years. I often add a little orange zest and a few tablespoons of fresh orange juice to it. The sweetness goes well with the heat.
