Original Recipe Yield 2 - 8 x 4 inch loaves
 

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups white sugar
  • 2 eggs
  • 3/4 cup vegetable oil
  • 2 1/2 cups mangos, peeled, seeded and chopped
  • 1 teaspoon lemon juice
  • 1/4 cup raisins

Directions

  1. Combine all of the dry ingredients. Beat eggs with oil and add to flour mixture. Add mangoes, lemon and raisins.
  2. Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees F -175 degrees C (325 degrees F for glass pans) for about 60 minutes or until toothpick comes out clean.
