Chinese Chicken Salad I

First comes the sweet and sour sauce and a bit of ginger in a bowl. Next romaine and bean sprouts. Then the shredded chicken. Give it a stir and you have a remarkable luncheon entree. Top with almonds and a good sprinkling of ground pepper.

Romaine, Mandarin oranges and green onions are coated with a sweet, sour and peppery dressing and then sprinkled with lovely sugared almonds.

Udon noodles are cooked and combined with cucumbers, sprouts, green onions, carrot and lots of freshly chopped mint. Then everything is tossed with a spicy ginger/peanut sauce and garnished with roasted peanuts. Makes six generous servings.

We used to serve this salad in First Class (when service was still first class). Nearly everyone who had this salad commented on how good it was. Romaine lettuce, toasted almonds and hard-cooked egg are tossed with blue cheese dressing. This salad is best if served very cold and not made too far in advance of serving.

Ginger, peanut butter, hoisin sauce, brown sugar, chili paste, rice wine vinegar and sesame oil make up this wonderful dressing. What we love are the fried wontons tucked inside the chicken salad.

Soy sauce and sugar, added to a bit of vinegar and oil, stir up into a dandy dressing that tops this broccoli/romaine salad. Lightly toasted ramen noodles and chopped walnuts are sprinkled on before serving.

I always get rave reviews when I serve this simple salad with a zesty poppy seed dressing! I often don't use the full amount of dressing as I prefer less.

The cooked dressing is flavorful and easy. And the salad is crunchy and fun. Shredded cabbage, lettuce, noodles, chicken, green onions and almonds. Serves twelve.

An excellent summer salad that can be altered to suit your liking. Other cheeses I have used include Cheddar and blue cheese. I have also added grilled chicken breast to make it a dinner salad.

Having two different lettuces, Romaine and red leaf, is a nice touch in this hearty tossed salad. And there's a nice balance of soft and crunchy: tomatoes and mushrooms to sesame seeds and almonds. Colorful too.
