2 cups all-purpose flour
1 cup cornmeal
1 pinch cayenne pepper, or to taste
salt and pepper to taste
2 eggs, beaten
3 tablespoons vegetable oil
2 eggplants, peeled and sliced into fries

DIRECTIONS
In a shallow bowl, stir together the flour, cornmeal, cayenne pepper, salt, and black pepper. Place the eggs in a separate bowl.
Heat the oil in a large skillet over medium heat. A few at a time, dip the eggplant pieces into the egg, then into the flour mixture, then back into the egg, and back into the flour mixture. Fry the eggplant in the hot oil until golden brown. Drain on paper towels, and serve immediately.

Bland, but much better with extra salt, pepper & garlic powder added to flour mixture. I had extra zucchini so "french fried" it as well; it turned out FAR SUPERIOR to the eggplant. The zuccini was a HIT WITH OUR 5 YEAR OLD!

Pretty messy to make, tasted pretty good but bland and not worth all the effort in my opinion. Maybe would be better with some spices added to the cornmeal/flour coating.

With ranch, these were okay. They're bland otherwise. They were incredibly messy to make. Maybe a deep fryer would work better.

As a gardener and chef, I have lots of eggplant coming in, so i looked for a good way to put them to good use. You'r recipe is marvelous thanx for sharing it with us.

Fantastic and easy to prepare. Use a deep fryer. Add additional spices to the flour mixture to your taste. I lightly salted the eggplant and left the pieces in a bowl for about 1 hr. prior to frying and I only dipped once in the egg and flour mixture. My kids loved them with ketchup.
