First comes the sweet and sour sauce and a bit of ginger in a bowl. Next romaine and bean sprouts. Then the shredded chicken. Give it a stir and you have a remarkable luncheon entree. Top with almonds and a good sprinkling of ground pepper.

This is a perfect luncheon salad with just a hint of curry. Lots of chicken, golden raisins, pineapple, and celery are folded into a mustard and mayonnaise dressing then sprinkled with chopped pecans and fresh grapes.

This recipe makes four composed salads that are delicious and fun to make. Lettuce is piled on each plate, then tomatoes and green onions are sprinkled on. Next come the yummy slices of grilled chicken and a handful of tortilla 'crispies.' Finish with a zesty Italian dressing.

This is a crunchy, wonderfully satisfying salad that is fabulous with grilled chicken, leftover from yesterday 's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice wine vinegar. Fried rice noodles add the crunch. Serves six. 

Teriyaki Chicken Salad

Chicken breasts marinate overnight in orange juice, soy sauce, and lemon/lime carbonated soda. These are then grilled, cut into strips and mixed with lettuce, tomatoes, and mozzarella, and a tasty garlic infused lemon and oil dressing.
