This is a great use for leftover chili. I don't think I would make a batch of chili specifically to prepare it this way. I like to half my bell peppers and lay them down on the sheet to bake and then fill them with some chili and pick up the pepper and eat it like a loaded chip! Yum!

Initially I thought wow this is a great idea chili inside some peppers. To be honest the taste was alright, it was the combination of beans and peppers that just didn't seem to hit the palette right. I do see now why most recipes have rice. The rice would have soaked up the water from the peppers. Sorry, just something about this combo that was just average. Might try again with out beans and try mixing a mixture of cheese into the blend before putting in the pepper.

Very clever Verna! We love chili too which is the reason this caught my eye. I used pinto beans, cumin, cocoa powder and a splash of black coffee to resemble the taste of my homemade chili. A really nice change from traditional stuffed pepper recipes which my gang inhaled! Thank you!

This is excellent! I used sweet red peppers and made it for Valentine's Day (other than using the red peppers, I didn't change the recipe at all) -- this is such a nice change from the more "traditional" stuffed peppers. I will definitely make it again -- it's a keeper! Thanks, Verna.
