I just made this with chicken breasts and the egg noodles you get in the frozen foods section at the store. Not too bad. Definitely needs a lot more seasoning than what is listed in the recipe. I added thyme, oregano, and a lot more garlic.

I'm sure it has something to do with my lack of experience, but I have attempted homemade noodles several times now and they NEVER turn out to be what I am expecting. I just have to stick with frozen or packaged noodles.

Very easy and fun...rolling out the noodles and twisting them made me feel like a real chef. I didn't roll the dough paper thin so my noodles were thicker and took about 30 minutes to cook. I used leftover turkey from Thanksgiving for the stock and also used one egg instead of egg substitute. So good!

These noodles were wonderful. I did have a problem unrolling them as I had rolled them out paper thin to begin with so they often broke in half and the process was tedious because of it. Next time I would not roll the dough out so thinly. Besides that, the flavor of the chicken was quite good, the broth was just right and the noodles filling. This meal is almost exactly like the one my mother makes except she uses the remaining turkey after thanksgiving and her noodles are much larger. A meal we look forward to the day after!

I grew up on this...she taught me how to make homemade noodles until she discovered Mrs Reames frozen noodles...and she uses roast beef sometimes in place of the chicken.....and we serve it over mashed potatoes with corn....YUM.....
