Chicken and Turkey Marinade

"A 24 hour marinade, guaranteed to please every time. Chicken or turkey is always moist, and tender. Use half of a recipe for a chicken, or the full recipe for a turkey of up to 25 pounds. Everyone will clamor for this recipe!!! Use the drippings from the pan to make gravy as usual. It is not necessary to strain drippings first."

1 cup olive oil
1/2 cup soy sauce
4 lemons, juiced
1/4 cup prepared yellow mustard
1/4 cup minced fresh chives
1/2 cup minced fresh sage
1/2 cup minced fresh oregano
1/2 cup chopped fresh parsley
1/4 cup minced fresh thyme
2 teaspoons minced garlic, or to taste
1 tablespoon paprika
3 tablespoons salt-free herb seasoning blend

DIRECTIONS
In a small bowl, whisk together the olive oil, soy sauce, lemon juice, and mustard. Stir in chives, sage, oregano, parsley, thyme, garlic, paprika, and herb seasoning. Cover, and refrigerate for 30 minutes to allow flavors to blend before marinating your favorite meat.
Place turkey or chicken in a 30 gallon plastic kitchen bag. Pour marinade over the bird. Grasp the bag a few inches above the poultry, and press air from the bag. Seal with a twist tie. Rotate bag to coat turkey with the marinade. Marinate in the refrigerator 24 hours, repositioning the bag every 4 hours, or so. Remove poultry from bag before roasting, and transfer marinade to a saucepan. Boil marinade for a few minutes, then use to baste the turkey every 30 minutes, or so, while roasting. Discard any remaining marinade when turkey is done.

This was a great recipe. Everyone at the meal thought it was wonderful. Instead of marinating it in a 30 gal twist-tie kitchen bag, I used a 40 gal Ziplock bag, then didn't worry about leakage during the marinating/turning process. I then transferred the meat and marinade to a turkey cooking bag and didn't worry about basting it.

This recipe has been updated by the staff in response to a request by the submitter. We have changed the lemon juice to 4 lemons, juiced. We have changed the mustard to Dijon.

This is with out a doubt the best of the best. I have a son, who with a lot of friends, do a lot of smoking of meats. I recently acquired a smoker and used this recipe on a turkey. My son said that the turkey was the best he had ever eaten and could not stop eating it. He took home a lot of left overs and told me later that they made the best sandwiches ever. DO NOT miss the opportunity to use this.

Great! Easy and had a great flavor. I scaled the recipe to one serving and used it on two turkey tenderloins, which we grilled. (After marinating for 24 hours). Unfortunately, I had to use dried herbs for almost everything, but I had fresh basil so I threw a bunch of that in. I also threw in some lime juice. This is one I would make again!

Awesome and versatile marinade! I have also used these exact ingredients with sauteed veggies and served over baby potatoes. My husband, who really enjoyed the potatoe/veggie mixture, said "you have out done yourself!"

I made 1/2 a recipe and used to marinate 4 chicken breasts that I grilled. Modified slightly as I didn't have all the fresh herbs on hand, but it was still delicious. Will definitely try again according to the recipe on a whole bird.

I used this recipe to marinate two bone-in turkey breasts which I then smoked with hickory chips on low, indirect heat in my gas grill. The breasts marinated for almost 24 hours before grilling, breast side up (never turned or rotated them). The aroma before and after cooking was incredible and I've never received so many compliments... Not one scrap of turkey was left. I'll be doing my Thanksgiving and Christmas turkeys like this from now on. What a winner! Thanks Elaine!

I have used this recipe several times now with Turkey & Chicken both. Used it last year for Thanksgiving and everyone absolutely loved it. Makes the meat so moist & has such a great flavor. I inject it into my meats (when doing this be careful not to put too much in one spot - it tends to make that area soggy) ... It also helps to strain the herbs, use the marinade juice for injecting & then spread the herbs, etc ... on the outside of the Turkey or Chicken. This recipe is a keepsake in my opinion!

The best fast and flavorful marinade for Turkey ever! I like to use crushed garlic instead of minced. I usually don't have fresh herbs around, but this dish marinade works with dried herbs just as well. In addition to turkey and chicken, it is also wonderful with duck.
