We make this usually about once a month at our house - or rather, I usually make it. lol. It's one of my favourites, although I still have some trouble getting it to turn out right. We messed with the recipe though - we usually eat it with spaghetti, instead of rice. It's good either way, really.

This recipe was very good. The next time I make it, I think I will cut back on the fresh parsley a little bit, the flavor was a little overwhelming.

A little weird but good. Will probably make again. I'll cut back on the butter and oil though to make it a little healthier.

Everything is this recipe sounds amazing, but I did not care for this at all. It could be my fault though-I used diced tomatoes w/jalapenos in stead of italian stewed (don't ask, i can't believe it either!). I still don't think I would try this again even with the stewed. Sorry =(

I put the rice on first and by the time it was done my chicken scampi was ready. You can't beat having dinner ready in 20 minutes. Fantastic recipe!
