I added a few touches to the recipe like roast chicken from the grocery deli rather than boiled chicken. I also added a pound of cooked broccoli on top of the stuffing layer, and 2 cups of low fat sharp cheddar cheese on top with coarse freshly ground black pepper on top of that. The cheddar cheese and pepper went on in the last five minutes of cooking time. It was a one-dish balanced meal, and tasted great. Thanks for the great idea.
