I simply adore this dish, it's a really good combination with the chicken and the rice, and the vegetables make it spectular!

Very easy, simple and quick. You definitely need to add a side dish for it to be a dinner. I added all of the ingredients while the pan was still on so that the flavor was released and absorbed by the chicken. Also, I added more lime and cilantro, plus some lemon pepper. I served this dish with couscous. A great, quick and last minute meal.

Made this tonight and the family LOVED it. I loved how easy it was... I stuck to the recipe pretty much, just used chicken tenders and cilantro paste instead of fresh. I thought this had GREAT flavor and served with spanish rice and black beans, topped with some cheese, salsa, and crushed tortilla chips. Awesome, awesome, awesome.
