I made this as written and I thought that the sauce was a bit thin, like some other reviewers stated. I added a bag of stir-fry veggies that I had precooked and added when I stirred in the cashews. I served this over brown rice. Although it was tasty, I would probably not choose to serve it to company but I might make it again because I have a large container of cashews to use up.

This is very simple and very good. For the minimal amount of effort, it is worth 5 stars - a great weeknight dinner.

Recipe is very good. It is close to the thai dish I loved soooo much when I was stationed overseas! I used frozen stir fry veggies and it came out excellent!!!

Excellent! I used some more veggies: pea pods, yellow bell peppers, celery, white and green onion, & garlic. Really most any combination of vegetables will work. A nice light dish with a delicate finish.

This was super easy and really good. I was surprised. My 11 yr old son absolutely fell in love w/ it! He had seconds, and thirds, and fourths! He is already begging me to make it again! That says it all. I omitted the onion, can't stand them. But that was the only change I made. I steamed some broccoli to go with it. I changed the servings to feed 4. Sauce was perfect. I love the brown sauce, just like at the restaurants. Next time I will add some more veggies. Thanks for sharing!!! Because of you my son thinks I am an awesome cook!!!

Nothing very spectacular but it's a good simple dish. We found it too salty. Will cut the soy sauce by 1/3 the next time.

Great recipe! My husband usually wants a lot of spice in his food but he gave it a thumbs up and asked that I definitely make it again. Making it was a breeze - I'll be adding this to my book of favorite recipes. I'd say the serving size is 1 1/2 because I doubled it and had plenty for my lunch the next day.

I increased the serving size to four and the sauce was thin- I would recommend using 1C water instead of 1 1/3 the recipe calls for if you change it from 1 t0 4. I used brown sugar, teryaki sauce (didn't have soy) and added zuccini, mushrooms and garlic. Not knock-your-socks-off-good, but pretty-good-for-a-quick-dinner-good!

I think this would have been almost inedible if I had not cooked the onions in a cilantro-infused oil. The recipe was not especially impressive, but a good base from which to doctor. Next time I make it, I will cook the chicken in the water/soy sauce/sugar brother to give it some taste and cut the onions much finer. I will also add a clove of garlic. For sugar I used brown sugar, and I will probably carmelize the onions before adding the chicken.

This was delish! I followed the recipe exactly, and my husband and I thought it was better than any take-out cashew chicken we've ever had. Next time I might add some celery, carrot and bamboo shoots, but it definitely doesn't need it to be a 5-star meal. Thank you for the recipe!

This was a very good dinner - a 4.5 as many others have said - though not quite restaurant quality (probably because it is fairly healthy). I added fresh red bell pepper to the recipe and served with asian veggies and brown rice. It passed the picky husband test, so that makes this a keeper!

I'm cooking for one so it's great to find a recipe that's tasty but makes a small amount. I like lots of sauce, so I doubled the sugar, the cornstarch and the water but left the amount of soy sauce as the original recipe listed it. That was plenty for my taste. I also added some red pepper flakes and some garlic powder to the onion/chicken saute. Served it with the Brazilian White Rice recipe from this site. With cooked and buttered carrots as a side, it was a good meal that I'll make again.

Really good recipe. I used boneless, skinless chicken thighs, quadrupled the sauce and added lots of fresh mushroom slices while sauteing the onions. Very good sauce served over white steamed rice. Thank you, this one's a keeper!

Delicious! I suggest decreasing the soy sauce - it was a little too salty alone, but mixing it with plain white rice made it taste better. I will cook it again!!
