This is a keeper! Great for family gathering or summer party. Doubled this recipe for a crowd and NONE was left! Husband used Turkey bacon instead and added fresh peaches....delicious!

Yummy - my whole family loved this recipe. I made it exactly as the recipe stated with no changes. We thought the carmelized pineapple really made the kebobs "pop" with flavor. Definitely will make this one again. Only change will be to precook the bacon so that it is more crispy.

This was good. I did not use mushrooms. I think the only changes I would make next time would be to use fresh pineapple and to take some of the marinade prior to adding the chicken and cooking it down to make a glaze. And then use the glaze to baste the chicken in while cooking. I also didn't wrap the chicken with the bacon. Instead I threaded it like a ribbon around the bacon and pineapple. The bacon never got crispy but it was still good.

Yummy!!!! I marinated just the chicken breasts whole, I left them for 8 hours and they were great. I added peppers, and onions and brushed the marinade on the kabobs before grilling. They were a hit!

This was a very tasty recipe. My whole family including our dinner guest really enjoyed it. It was very easy without a whole lot of ingredients. It was something we were able to put together in a short period of time. We added green peppers and onions to ours and it turned out delicious. Letting it marinade for 4 or more hours helps it absorb the flavor more.

Excellent! I marinated the mushrooms separately and used that marinade to baste the kabobs. I omitted the bacon and used fresh pineapple, onion, green peppers and tomatoes on the skewer. It was unbelievable! This will be our only kabob recipe.

This was SOO good! I used turkey bacon and it was still excellent for less the calories and fat! I also used pineapples with heavy syrup which made for a to die for sweet/salty combo. I'm not sure why everyone was marinating the meat and the mushrooms separately. I marinated them together and it turned out just fine.

My 11 year old says this dish goes on his list of favorites (w/ mac & cheese at the head of the list, that's saying something!) ONE THING I want to suggest: if you're like me, and don't always have honey stocked in your pantry, use some of the pineapple juice from the can of pineapple chunks you will use in this recipe. For the 2 TB of honey, I substituted 3/8 cup pineapple juice. It was the perfect amount of sweetness, and the acid from the juice helps tenderize the chicken in the marinating process. This recipe is perfect for customizing-- you could use green or red peppers, cherry tomatoes, oninon, etc.-- but don't be afraid to try it out exactly as is, it's terrific!

This is the most wonderful recipe ever! My kids and husband all were pleased! I even used Butterball Brand Turkey bacon on half, and they were amazing! Good crowd pleaser!

These are wonderful. I'd marinate longer and get a fresh cut pineapple instead so you have enough pineapple and larger chunks.

Really great flavor! The only problem I had was that the bacon doesn't cook on all sides (where it's pressed against other pieces on the skewers). So, I put the pieces in a hot skillet for a few minutes to crisp up. My husband didn't mind the soft bacon on the sides. I tried to boil the leftover marinade to make a safer basting glaze, but once it boiled I didn't appreciate the smell/taste. So, I didn't baste them at all. They really didn't need it - the chicken (after marinating x 4 hours) and bacon lent a nice flavor to surrounding pieces. I added green bell pepper, cherry tomatoes, and red onions to our skewers. Yum!

These were delicious. My whole family devoured them. I did as some suggested and I doubled the marinade recipe. I used 1/2 to marinade the chicken cubes and 1/2 to marinade the mushrooms, which I left whole. I marinated chicken and mushrooms overnight and used the marinade from the mushrooms to baste the kabobs as they grilled. I also used regular bacon instead of thick cut and it crisped up nicely.
