I did not have eggplant or squash but recipe turned out great. Great flavor, does make a lot! I did add some seasoning to the chicken while browning. Also put over penne noodles as previously recommended.

Good recipe, great with penne pasta, too. I used a green and a yellow bell pepper. The only thing I would recommend is to not add the tomatoes right away, they cook down to a sauce after 10 min. I added them near the end of the cooking time and they kept their texture nicely.

Good flavor and easy to make. We served it with couscous. This makes a lot of food, and the two of us had to throw some away after eating leftovers a few days in a row. So my only advice is to halve the recipe if feeding only a few people.

Loved it - actually even my picky teenagers liked it. The second time I made it I didn't have any squash and it was still good. The second time I made it we had it over noodles, the first time just straight - either is good.

This was awesome! My husband ate it over rice but I had it plain and it was still fantastic. We upped the seasoning and added some crushed red pepper flakes since we like it a little spicier, and it gave it an extra zing. We'll definitely be making this again!

This is good man food. Easy to make, delicious, and lots of it. I cut the chicken into one inch pieces before cooking in oil to facilitate fast grubbin. If you have men to feed you can't go wrong with this one. Oh yeah, my wife liked it alot too.
