This is a really good recipe with a few changes: increase garlic to 1-2 cloves, 3 cans chicken broth, 1/2 fresh diced tomato instead of canned, 1 can corn, add dash of paprika and extra dash of chili powder. I also used a rotisserie chicken and shredded the chicken with my hands.
Cook onion and garlic with a little olive oil until onion is soft.
Boil broth with tomato, chicken, chili powder, cumin, paprika and corn. Add onion/garlic mixture, reduce heat and simmer until you're ready to eat.
I left out the cornstarch as I like the broth and the tortilla chips soak some up. I also didn't have any cilantro, I will try that next time. I may also try a cup or so of black beans or brown rice.
