I, too, had leftover chicken. My husband doesn't do spicy, so I used regular diced tomatoes, and added corn and beans. Substituting canned chicken would make this an excellent have in the pantry meal.

I had roasted a chicken earlier in the week and used the shredded leftovers in my soup. I also sauteed the onions and garlic in olive oil before adding the other ingredients. This was a really quick chicken tortilla soup recipe. Other ideas are to add some black beans and corn to give the soup more depth.

Yummy! Definately will do again, "at least once a month" (husband said). I added a can of corn. The taste was restaurant quality!! 2 thumbs up!!

This is the Best!!!!!!! I was very nervous about making it at first for my roomates, but now they ask for it every Sat. I love it and i make it just like it says i do add lots of chyenne pepper.

This recipe was quick and really delicious. I added an extra dash of chili powder and about 1/2 cup medium prepared salsa. I will definitely make this soup again. Thanks for such a wonderful recipe.

It was so so Good. I cut up my chicken breast browned it with evoo with some garlic and cumin. I couldn't help adding things to the pot. I added 3 bellpeppers green, yellow, and red. 4-5 Cans of chicken broth, mexican rotel, diced tomatos. I also added corn, black beans, pinto beans with jap., and northern beans(all cans). I added a whole jar of quick cheese or quiz cheese. It was so good! My hubby said it was better that the restaurants. OH and a 1/2 a pack of taco seasoning and red pepper.

I took the advice from others and used only the chicken broth and no water, it made the difference. We used a precooked chicken from the store and shredded it indtead of the cubed chicken. Also because we like spice we added a serrano chile.

I didnt have chicken stock or boullion cubes, but did have a can of cambells southwests chicken soup i used that and 3 cups of water.....it was yummy!! I added 1/2tsp salt to help falvor come out, butter VERY easy and filling!!

This is a really good recipe with a few changes: increase garlic to 1-2 cloves, 3 cans chicken broth, 1/2 fresh diced tomato instead of canned, 1 can corn, add dash of paprika and extra dash of chili powder. I also used a rotisserie chicken and shredded the chicken with my hands. Cook onion and garlic with a little olive oil until onion is soft. Boil broth with tomato, chicken, chili powder, cumin, paprika and corn. Add onion/garlic mixture, reduce heat and simmer until you're ready to eat. I left out the cornstarch as I like the broth and the tortilla chips soak some up. I also didn't have any cilantro, I will try that next time. I may also try a cup or so of black beans or brown rice.

Delicious and Hearty soup on cold nights. I made a few alterations: 3 cans chicken broth, 1 clove of garlic, 1 shallot (in place of onion) sauté them in a pat of butter, 1 whole grocery store rotisserie chicken (deskinned/ deboned shredded), 1 can regular diced tomatoes, 1 can of whole kernel corn (drained). I used the same spices as the recipe maybe a little extra. This had my house smelling wonderful. Takes no time to cook and I served it in a bowl with crushed tortilla chips topped with shredded cheese (extra of course). Next time I may add 1 extra can of corn. This is a great meal to share with family and friends especially children.

I love this recipe! I added a can of corn and chopped zucchini. Also I cut up corn tortillas in strips and fried them to put on top. I couldn't have found a better recipe! Thanks
