I love this recipe and make it regularly with rotisserie chicken from the grocery store. This is even better with the mexican style tomatoes with cilantro and a can of green chilies.

Great recipe! Made this for my parents and they loved it. I did add extra corn, onion, and salsa, and also added a can of black beans. Definitely shred the chicken, the smaller the better. You can also use a rotisserie chicken and eliminate the 5 minutes of sauteeing step. Will make this again!

I've used this recipe again and again to rave reviews. It's SO easy to make and I love the flavor of the lemon juice. I love to top mine off with extra lemon juice, avocado and homemade fried tortilla strips. Mmmmm...

I first made this recipe a little over a year ago... I made some changes after reading some reviews and it was AMAZING! First of all, I make this in a crock pot, I throw everything in, including frozen chicken breasts, and let it cook. I take the chicken out after it's done and shred it. Shredded chicken tastes SO much better then chunks for this recipe. I've made this so many times that I don't measure anything anymore... I just keep adding until the crock pot it full! This recipes turns out fabulous even when you add different items that you may like. My changes... I add a package of taco seasoning, kick up the amout of cumin considerably (I just keep tasting it), add a can of white hominy, a can of black beans, I add shredded cheese in the crock pot or just when you serve it, and about an hour before serving it I add a small bag of noodles that are sold in the internation isle. They are like miniture shells, they have to be really small because regular ones get so big that it throws off the texture of the soup. They are called "La Moderna" Product of Mexico. They are only .60 a bag! They really give it what it's missing. Served with baked tortilla chips that I break up and spray with cooking oil... just until they turn golden. I gave it 4 stars because I add alot to this recipe, but after I'm done I'd give it 5! When all is said and done, we have a delicious and very filling dinner! It's great to freeze and take for lunch. My Hubby LOVES THIS!!! I'm making it today

This is my absolute favorite mexican soup recipe! (And I know my mexican food...) I only added one thing (1/2 to 1 whole packet of taco seasoning) that helped make the soup a little bolder, and the consistency a bit thicker. I found the soup a bit runny watery and not spicy enough for me. Adding the packet of taco of seasoning really made the soup! (If you make your own taco seasoning, throw it in instead!) Top with a dollop of sour cream and sliced avocado and you've got yourself the best soup. Serve with cornbread or quesadillas for a full meal.

I love this soup. I modified it into a vegetarian soup by using vegetable broth instead of chicken broth. I throw all the ingredients except the chicken in a big pot and let it simmer awhile. I either omit the onion or saute it first. I add black beans for a protein source. Then I take out just enough soup for me and put it in a smaller pot. I cook some chicken while the soup is simmering, cut it up and add it to the bigger pot for other members of my family who aren't vegetarians. We put tortilla strips, avocado, cheese and/or sour cream on top. It is one of my favorite and easiest meals.

This recipe is AWESOME! It is so easy to make and it tastes very yummy! I make mine in the slow cooker all day. First I brown my chicken on either side for a few minutes then add it in to the mixture. About a half hour before serving, I shred the chicken. When I serve it, I add some avocado slices! Yummy!

This was a huge hit! I was skeptical given how simple it looked but everyone asked me to please make it again. Only changes I made were to double the recipe and boil the chicken breasts to keep them moist. Doubled the garlic, chili powder and used a medium hot salsa. Thanks for a simple yet delicious recipe!

My husband liked this dish a lot. It was very easy to make and tasted great. I let it simmer in the crockpot for a couple hours. The one change I had to make after tasting it though was to double the spices. As it is written now, it is spiced so that toddlers will eat it.
