I followed the tips from the readers review and used chickpeas instead of hominy. (Cumin instead of oregano) To make more broth I just boiled the bones of the chicken quarters and added it to the end and just added more seasonings if needed. I also added corn - Delicious!!! A big hit from my family and church friends!

Delicious & very flexible! Changes: I used an extra oven roasted chicken that I made (My mom told me to always do 2), used white beans only (canelli & butter) & 2 cans of chili - ready diced tomatoes. Also no hominy, it had too much sodium.

My Husband said it was the best tortillas soup he had ever had. I did make a few changes: used 3 cans of chicken broth (no water) and instead of regular canned tomatoes, I added 2 cans of Rotel tomatoes with Lime and Cilantro. Also added a few tablespoons of lime juice and some cumin. Excellent recipe. Thank your for sharing it.

Wow, this was great! I didn't have avocado or cilantro, so I just left them out. I also just used more corn instead of hominy. My husband and I both loved it! We'll be making this a lot!

Yum, this recipe was wonderful. I cooked the chicken with the onions and garlic. Instead of a 28 oz can of tomatoes, I used a 16 oz jar of mild salsa. Then I added a can of Rotel with green chilis. I used 4 cups of chicken broth, no water. This added plenty of liquid for the soup. And I used cummin instead of oregano. The rest of the receipe I left the same. I let it simmer on the stove for about 30 minutes. I think the simmering is key here, so the flavors can meld together. Served it with tortilla chips, advocados and cheese. Good eating. This is going in the keeper file.

This soup was magnificent! I followed the recipe exactly and WOW!!! The only thing I changed was that I doubled the water and broth - but it was excellent! This will definetly go into rotation, and I have already printed and given this recipe to 3 people! WELL DONE!

Great recipe. I left out hominy, just increased corn. I used 1/2 rotisserie chicken from the deli. It is yummy and I will make it again. Cookie

Amazing! I love LOVE this soup. It's even better the next day as leftovers-that's saying something! Like other reviewers, I leave out the hominy-no reason, other than this is usually a recipe I make on a whim, and I don't have hominy laying around the house. If I'm in a huge rush, I just pick up a roasted chicken from the store and shred that. Serve with cornbread-HEAVEN!It's seriously one of my favorite meals.

This was really good. I liked the herbs as listed in the original recipe (it didn't taste Italian because of the oregano). I used extra corn rather than hominy, but otherwise the recipe is great as listed!

Not great. There wasn't much flavor. It seems like it needs more of a tomato flavored base. We didn't like the hominy in it, either. I won't make it again.

This was great! I read all the comments and made some adjustments. Everyone loved it and we ate every drop. I used some frozen homemade chicken stock that I had made from a whole chicken baked with a Mexican rub under/on the skin and lime juice under the skin/limes inside. I think the Mexican stock really made a difference.
