Me and my kids really liked this soup. I thought they'd see the green chilies & cilantro in there and wouldn't touch it but they did. They were careful but loved the chicken, corn, beans and broth. I used a box of chicken broth (no MSG) and added about a 1/4 cup water because I used 3 chicken breast instead of two. I knew my kids would be mostly after the chicken. I also didn't used hominy (didn't have it), added cumin, added Penzeys fajita seasoning, and little salt. I used a can of original stewed tomotoes since I didn't have crushed and just ran them through my Magic Bullet with juice. (my kids don't like chuncks of tomato but like the flavor). I didn't drain my can of corn either. Turned out great! I could have stood it a little spicier myself but I love heat, have to watch that with my kids though. I will definitely make this again, it wasn't too time consuming or difficult. Oh and too, many may be surprised to find that oregano is used commonly in Mexican dishes, subtly, not like it is in Italian dishes, don't be scared to add it, it doesn't make this soup taste like spaghetti I promise. Oregano is even one of the spices in my fajita seasoning along with basil, thyme, rosemary, marjoram, nutmeg, cumin, red pepper, celery, garlic, and s&p. Just an FYI...enjoy!

This soup was a hit! My 12 year old son had two bowls and told me to give it a great rating! I did omit the hominy (didn't have any) and the cilantro (my family doesn't like it). I also seasoned the chicken heavily with fajita seasoning and chili powder while I was cooking it. I used all chicken broth and no water to make it a bit richer and it was perfect! I will make this recipe again and again! It was super easy and super delicious!

Fantastic! Changes I made: I had leftover smoked chicken, so I used that. Then to make it easier I used stewed mexican style tomatoes and did not use the green chilies, onion or garlic...turned out great!

We loved everything about it. After many bites my husband was still saying "yum" after each bite. I made it exactly as written. I think the hominy adds something special. We topped our bowls with diced avocado, crushed tortilla chips, and some cheese.

We liked this soup. You really can play around with the ingredients and flavors. I added more broth (a box plus a can) and no water. Then more chilis (7 oz. can I think). No hominy. Sub. cumin for oregano. And added sliced corn tortillas. Great recipe for leftover chicken, and I'm glad it freezes well because that's what I intend to do!

Great stuff,cummin (no oregano).Not much of a hominy fan so I added a can of garbanzo beans.Better than any resturant around :)

This soup was lovely! I tweaked a couple things. I only added 1tsp of chili powder because i don't like super spicey, and then i used a can of crushed tomatos mixed with green chili's for speeds sake. I also used white beans instead of black. Next time I will simmer for an hour like others have recomended and add more chicken broth, no water. So probably 3 or thre 14.5 ounce cans.

Wow - great recipe! I did spice it up a bit more by adding more chili powder and some cumin. More garlic. Also topped with diced jalepenos, but we like it hot! Thanks for a keeper recipe.

With a quick addition of a corn tortilla slurry..(flash fry tortillas in sautee pan, coating both sides in oil til soft, not crisp)cut small sections and place in food processor or blender, add chicken stock or base from soup and blend til consistency of a daquiri or slurpee. Pour back slurry into soup and let it simmer to finish. Just a great background flavor enhancer. Try it!

I really don't care for soup and especially my younger sister doesn't either. She is always hating on soup and after she saw her picky boyfriend eat and rave about it she gave it a try. I'm soo glad I finally gave this recipe a try because I'll continue to make this soup! I didn't use this exactly. I started off with whole chicken thighs in the pot and seared them for a few minutes on both sides while sauteing onions & garlic with the chicken. Then added the liquids. I decided not to use hominy since I was trying to cut back on carbs. I cut corn off fresh corn on the cob. Used one can of fat free clear broth, 1 chicken bullion cube & 1 tomato bullion cube. I used 1 jalapeno chopped and a can of whole stewed tomatoes. I didn't have any black beans, but I used a can of red beans and it's just as good. Topped with cheddar cheese, chopped white onion, cilantro, chopped corn chips, sour cream and guacamole. FANTASTIC!

Excellent recipe! The whole family said it was the best soup they had ever had! I wish I wouldn't have added the oregano, because I spent some time trying to get rid of that flavor. Last time I didn't use any. I ended up adding 3 cans chicken broth, 2 cans hominy 1 can mild rotel and one can hot with green chiles. I also love black beans so I used 3 cans of those. Added quite a bit of chipotle spice along with chile powder and cumin. I used my own made up mexican spice and grilled the chicken before putting it in the soup. Great recipe all around!
