This turned out pretty good. I used frozen spinach instead of the escarole and it made a fine sub.

This has been a family favorite for about 2 years now. My kids even gobble this up. I love that they are getting big spoonfuls of veggies in every bite! I've also brought this to showers and made it for guests and am always asked for the recipe. Surprisingly delicious considering it's so simple!

I found this reciped when I did an "ingredient search" to use what I had on hand. I thought it sounded like an odd combination, but OH it was SO good! My whole family liked it. I meant to have leftovers to freeze, but we ate the whole batch that night!

Really good flavor and so easy to make. Thank you! I used 3 cans of chicken broth, a can of petite diced tomatoes, and a can of chicken (along with the rest of the recipe) and it was great.

This recipe is healthy, easy to make, and will definitely warm you up on cold day. However, it could use a few things to liven it up a bit. Adding carrots, onions, garlic, tarragon, oregano or whatever else you'd like to add would make it a bit tastier. Using Italian tomatoes or some other sort of pre-flavored mix of tomatoes will also help. This recipe IS a keeper.

Quick, easy and surprisingly filling. I sauteed 3 cloves of garlic in olive oil and added it since I read a few reviews that it wasn't flavorful enough. Also a little less spinach and more fresh grated Parmesan on top. This was awesome!!

Great! Fast and easy! I bought a store roasted chicken and pulled the meat off to use. Since there was so much I added a couple of extra cups of broth. Also used one can drained diced tomatoes and had some fresh baby spinach so chopped some of that and threw it in. I did add a small amount of onion and garlic powder, but otherwise that was it. The whole family loved it!

Made this on a whim...very easy and very tasty! Great for a quick family dinner. Added minced garlic, basil, a bayleaf, onion powder, & pepper. Used store bought pre-sliced grilled chicken instead of cubed chicken. Delicious! Adding this to repetoire.

My family of six actually ate all of this soup in a single day. Very tasty and satisfying with crusty, toasted bread.

This recipe is a keeper.I only added a few spices to my liking such as basil, 2 bay leaves, garlic and tarragon and replaced some of the chicken broth with beef broth that I had on hand and it was fabulous. This one is going in my recipe box!

I thought this was really good and easy. The only complaints were from my husband and kids about there being too much spinach...but I thought it was perfect!

The soup was very bland, and I ended up adding 1 chopped vidalia onion, 2 minced garlic cloves, and tomato paste. The paste added a nice tomato flavor to the broth. I wouldn't recommend this. By altering it as much as I have, I don't consider it the same recipe.

This was awesome. I used leftover chicken I had from another recipe from this site. (The Roast Sticky Chicken-Rotisserie Style.) I didn't have parmesan so I added Mozzarella, instead. OMG, I could eat it all by myself. Thanks a lot for sharing the recipe.

This recipe is definitely a keeper. I used chicken that was leftover from the night before and a can of diced tomatoes instead of stewed tomatoes. It was delicious and filling. My husband loved it. I will be making this again!
