"This chicken can be spicy or mild but whichever way you choose it is definitely born in Texas! Add avocado, black olives or pico de gallo to the inside of the breasts for variation. For milder tastes, remove seeds from jalapenos."

4 boneless chicken breast halves, butterflied
2 roma (plum) tomatoes, sliced
4 jalapeno peppers, chopped
1 (1 ounce) package dry Ranch-style dressing mix
2 cups shredded Colby-Monterey Jack cheese
8 slices bacon

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Lay the chicken breasts out flat and sprinkle with Ranch-style dressing mix. Sprinkle a bit of cheese onto each half of each breast. Place 2 tomato slices and a sliced jalapeno pepper onto each one, and sprinkle more cheese over the tomato and pepper. Fold each piece of chicken over, and wrap with 2 slices of bacon. Secure with toothpicks. Place wrapped chicken into a baking dish, and cover with aluminum foil.
Bake for 1 hour in the preheated oven, or until the chicken is no longer pink, and the juices run clear.

I thought this was quite tasty. I pounded the chicken pieces but after putting all the ingredients on the chicken, I couldn't get them to roll up so I just laid them out flat and baked the chicken that a way. It still turned out well. I did cook the bacon a little first in the microwave oven.

This chicken was excellent for us...and even the kids. I took all the seeds out of the jalapenos except for one so it wouldn't be too spicy. Only problem: The bacon turned out soggy, so I broiled both top and bottom, but the sides were soggy. Maybe next time I'll try to cook the bacon a bit first OR maybe not even roll up the chicken and just put everything on top of the chicken, then broil...the bacon will be more evenly cooked. The combination of all the flavors was great. I definitely recommend it...don't be afraid of the jalapenos if you don't like it spicy...just take out most seeds.

Quick easy and delicious. I pre-cooked the bacon before I wrapped it around the chicken. Great flavor. I my boyfriend and I loved it.

As a new chef, I am always looking for simple and delicious recipes to make. I am a huge fan of spicy and this recipe really hit the spot; not too spicy but not at all bland. My boyfriend really loved it too. I ran into a few of the same problems other people had: the bacon was not done enough - despite having cooked it prior to putting it in the oven and not being able to roll the chicken but it was delicious all the same. I also added just a few slices of avocado to the inside and it was perfect. Great way to try something new.

over all, great dinner. i cooked the bacon half way before wrapping it around the chicken and it was perfect. flavors were great together, tastes much better the next day! i also put olives inside along with the cheese, pepper, and tomato.. it added a great taste as well.

Very tasty, and very easy. Depending on how spicy one's family enjoys things, japlepenos can be decreased, or just picked out like a few of mine did in the family!
