I used fresh spinach; omitted the mayonnaise completely; used 4 eggs instead; and the onion was more diced than finely chopped. Also I wanted it cooked faster so I used 425F for 15 minutes on the higher rack, and and then changed to 350F and moved the quiche to the bottom rack for another 30 minutes, and let it stand for 5 minutes. Turned out pretty good.

This recipe was good, quick, and easy. The only reason I gave 4 stars is because I would have liked a little more egg.....next time I will cut down on my chicken and spinach to allow for a thicker egg coating on top.

This recipe is fantastic and so easy! Next time I will cut back on the milk and will use the whole package of spinach. So good!

Mayonnaise makes it tangy. I liked it, my husband did not. I substituted egg beaters for eggs and used 3/4 cup of egg substitute. Probably could have used more in order to fill the crust better.

This turned out great, but i used canned chicken, which I shredded and next time I'm going to use less mayo, it was far to overpowering. Loved it though, gonna start making it more often ;)

Quick and easy! Made it without the crust, used fresh spinach-just as good!

I made this as is the first time and it was very good. I gave it only 4 stars because I thought there could be more vegetables and the second time I made it my own and it was even better. My changes: I substituted ranch dressing for the mayonnaise, substituted chopped broccoli for the spinach and used a whole 1 lb. bag, added 1 clove chopped garlic, added 4 slices bacon fried crisp and crumbled into the mixture, a whole onion, 4 eggs, decreased cheese to 1/2 c. and used homemade pie crust. I sauteed the onion and garlic in some of the bacon fat then added the thawed broccoli and cooked until the broccoli was heated through. Beat the eggs with the milk and dressing, stir in chicken, cheese and veggies. pour into a deep 10" pie plate. There was enough salt in the cheese, dressing and bacon so didn't add any extra.

This was more like a mayonnaise pie when I made it... granted, I didn't add the spinach or onion, but still it was kind of nasty
