Chicken Spinach Quiche

INGREDIENTS

  • 1 cup shredded Cheddar cheese, divided
  • 1 (9 inch) unbaked pastry shell
  • 1 cup diced cooked chicken
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup finely chopped onion
  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup mayonnaise*
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

DIRECTIONS

  1. Sprinkle 1/4 cup cheese into the pastry shell. In a bowl, combine the chicken, 1/2 cup spinach, onion and remaining cheese (save remaining spinach for another use). Spoon into pastry shell. in a bowl, whisk the eggs, milk, mayonnaise, salt and pepper; pour over the chicken mixture.
  2. Bake at 350 degrees F for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 15 minutes before cutting.

Reduced-fat or fat-free mayonnaise is not recommended for this recipe.

Mmmm! I made this for a brunch at work and it was great! I only used 1/2 cup of milk because I was worried about it being too watery. I also used broccoli instead of spinach. I will definitely make it again!

This is a great recipe! Comments like the best quiche they have ever tasted were many. I did a few adjustments to the recipe: Used only 1/2 cup skim milk, substituted low fat miracle whip and added an extra egg and it turned out great. Will definetly serve this again.

I loved this. It turned out beautiful and delicious! Even my husband who says "Real men don't eat quiche!" enjoyed it!
