Chicken Sandwich Casserole

"These are excellent! You can also follow this same recipe and vary the sandwich filling, using ham and broccoli or grilled cheese instead. I've used many different combinations of fillings, from tuna to hamburger, and they're all great. It's a fun recipe to experiment with!"

12 slices white bread, lightly toasted
4 cups chopped cooked chicken breast
1/2 cup chopped celery
1/2 cup chopped onion
4 eggs, beaten
1 cup mayonnaise
2 cups milk
salt and pepper to taste
1 (10.75 ounce) can condensed cream of chicken soup
1 cup shredded Cheddar cheese

DIRECTIONS
Place 6 slices of the toasted bread in the bottom of a lightly greased 9x13 inch baking dish. Sprinkle the chicken, celery and onion on top of the bread, then cover with the other 6 slices of toasted bread.
In a medium bowl mix together the beaten eggs, mayonnaise, milk and salt and pepper to taste. Pour this mixture over the sandwiches, then top with soup; cover baking dish and refrigerate overnight.
Preheat oven to 325 degrees F (165 degrees C).
Bake dish, covered, at 325 degrees F (165 degrees C) for 45 minutes; remove cover, sprinkle with cheese, and bake for another 30 minutes, uncovered. Remove from oven and let cool and set for 10 minutes before serving.

This recipe has potential. Our family of three considers it a "keeper" so that immediately says it's good. I would consider adding cheese to the chicken before laying the top layer of bread. I will definitely be experiementing with this one.

A more accurate name would be "cheese & chicken bread pudding", because that's what it is. Made the recipe as stated. Did not care for the sogginess nor the bland flavor. Will not make this again.

More preparation than I am used to but this came out very good. My husband probably enjoyed this the most. Both daughters were not happy with the onion, but I personally liked this dish as well.

Let me start by saying this was overall a tasty recipe. However, it is not a very pretty one. The casserole looks a little yucky. Thankfully, I have a family that will taste just about anything. So, we were happily suprised that the taste was so good. I wonder if all of the liquid ingredients are necessary. I kept wondering if the eggs were cooked all the way. It's a recipe I'll make again, maybe I'll just have to experiment a little bit!

I run a Family Daycare Home and the children loved it (including me & my parents). The children range from 7 mos. thru 5 yrs and a few are very picky eaters, they sure were not picky when it came to this dish. I was a bit concerned with the keeping it over night but it gave the older children and me a project to do at the end of their day and something to look forward to the next day.

We LOVED this recipe. To make it healthier, I used whole wheat bread slices, and fat free mayo, milk, soup, and Mozarella cheese. I also added a few splashes of Garlic-flavor Tabasco (will add more next time). A definite keeper!
