Not bad for a quick lunch - I used left over grilled chicken I had on hand that I sprinked a bit of taco seasoning onto it. I didn't spread mayo on the bottom of the tortilla, just layered the chicken and veggies adding a bit of thin sliced cucumber. I topped it with the cheese and salsa a little dollup of sour cream and then drizzled with ranch dressing.

I was very indifferent about this. It's not bad, not great...just a salad on a tortilla. I might make this again if I add some Mexican spices to the chicken, but that will make it awfully close to the chicken tacos I've made for years.

This was a great easy recipe. To change it up a bit you can season the chicken and use ranch instead of mayo. Good way to get lots of vegatables in a meal.

This made a tasty, quick dinner. Here's what I did: 1. Cooked the chicken indoors, then grilled outside for a few minutes for that nice flavor. 2. Used warmed corn tortillas instead of flour. 3. Spread just a small amount of mayo on the warm tortillas. 4. Cubed and heaped the chicken onto the mayo'd tortillas. 5. Grated colby-jack cheese over the warm chicken. 6. Topped the chicken with the salad ingredients. Yum!
