Great recipe! I needed something I could prepare earlier in the day to serve at dinner time. I served with Peppy's Pita bread, also from this site. Recipe is great as is, but I made the following adjustments to preference: omitted onions (I don't like 'em), used fresh basil from my garden and added 1/8 tsp. salt to the dressing. Also, I boiled the chicken in broth before cubing (and I used 2 chicken breasts.) Yum! I'll make again.
